Shane Lynch of Bothell Stirs Up Good Dishes
in the Evergreen Kitchen
KIRKLAND, Wash. – Shane Lynch has been named the executive chef at Evergreen Healthcare. He oversees the Evergreen Hospital Medical Center’s food services for patients and the public/employee Images Cafeteria, three delis and an espresso stand.
Lynch, 26, has been upgrading the food services. He is incorporating things such as fresh pastas, made-to-order pizzas, and fresh vegetables into the menus.
“Patients,” Lynch said, “should not only enjoy the excellent service and medical care at Evergreen, they should remember the food as awesome. I don’t believe there will be jokes about hospital food when we finish upgrading the menu. Good food is no joking matter.”
Some parents warn their children to stay away from the internet when they’re not around to supervise. Shane Lynch’s parents forbid him to turn on the stove. The directive didn’t work. “The first thing I remember cooking, I was really young, was raviolis from scratch,” he said. “Roasted butternut squash raviolis.”
His mother nicknamed him ‘Chef Shane.’ Today that’s his professional title. Lynch graduated from the famed Culinary Institute of America in New York. While at the prestigious school, he assisted celebrity chefs at the famed James Beard House in New York City and he won a school cooking contest. As the winner, he toured the country giving cooking.
He served an apprenticeship at Westchester Country Club and worked at the Eiffel Tower Restaurant in Las Vegas. He was recruited by Thomas Cuisine Management, Evergreen’s partner that provides food for patients as well as the food service outlets.
When he’s not whipping up delicious dinners, Lynch enjoys riding his motorcycle and going rock climbing or hiking with his dog, Ozzie. He lives in Bothell.
